Growing up, I loved having seaweed as a snack. Last December, I had Korean BBQ and tasted roasted seaweed flakes mixed with sugar and sesame seeds as a banchan (Korean for "side dish"), and it changed the game. It was such a unique combination of sweet and savoury and I enjoyed it thoroughly.


In this meal, I used roasted seaweed flakes to enhance the flavour of the rice bowl topped with a fried egg and drizzled with thick soya sauce. This quick and easy idea is perfect for a light lunch or dinner and can be prepared in less than 10 minutes.


Although this meal might not be the best for health-conscious readers as it contains processed food and ingredients with oil, it's a convenient choice for busy working adults, and I'd say enjoying this once in a while is justified. You still get some protein from the egg and other health benefits from the seaweed.

What are the health benefits of seaweed?

High in Iodine: Iodine is an essential mineral that supports thyroid function, which regulates metabolism and energy production in the body. Seaweed is one of the best natural sources of iodine. A diet that lacks iodine can lead to hypothyroidism, which can create symptoms such as low energy, dry skin, tingling in the hands and feet, forgetfulness, depression, and even weight gain.


Immune Function: Seaweed contains antioxidants including Vitamins C and E and compounds like carotenoids and flavonoids. These antioxidants help protect the body from oxidative stress and inflammation, which can reduce the risk of chronic diseases such as heart disease and cancer. The seaweed featured in this post and used to calculate the calorie content is Dae Chun Laver Flakes from Japan Home in Singapore, but I've also tasted CJ Bibigo roasted seaweed flakes and they are equally delicious. They even come in variations like butter soy sauce flavour - give it a try!


Also, if you're too busy to cook white rice or just lazy like me (guilty as charged), you can use microwaveable Korean sticky rice bowls that come in single servings, they are really convenient.


Instructions

  1. Prepare the Rice: Either cook white rice using rice cooker, or heat the microwaveable rice according to the package instructions.

    1. If you don't have a microwave at home, you can use the steaming method instead: bring some water to a boil in a pot, place a steamer on top, put the container of microwavable rice in the steamer, cover it, and steam for about 2 minutes. Occasionally stir the rice with a spoon to make it less sticky and to heat it evenly.

  2. Fry the Egg: While the rice is heating, fry an egg in another pan to your desired level of doneness.

  3. Assemble the Bowl: Place the heated rice in a bowl and top with the fried egg. Generously sprinkle the roasted seaweed flakes and drizzle with some thick soya sauce over the rice and egg.

  4. Serve and Enjoy: Mix everything together and enjoy your quick, easy, and tasty meal!
