Iced Caffè Latte made with noomoo Barista Coconut Milk.
I'm not usually a fan of coconut (gasp), especially coconut juice (even more audible gasp), so when I tried making an iced caffè latte with noomoo Barista Coconut Milk, I was hesitant.
But after one sip, I was pleasantly surprised! This latte brought back memories of the creamy and delicious Vietnamese coconut coffee I enjoyed last year, though this version is lighter, plant-based, and dairy-free. The subtly sweet coconut milk complemented the coffee perfectly, enhancing its flavour without overpowering it.
noomoo is a Singapore-based plant milk company that I recently discovered. Their plant-based milk stands out among other brands for being much frothier, creating a lighter texture and a more refreshing drink -- whether it's this iced latte or iced matcha latte featured in my previous post. noomoo's plant-based milks are vegan-friendly, dairy-free alternatives that are also surprisingly versatile.
For those of you who are health-conscious and hesitant about drinking coconut milk due to its high saturated fat content, here's something to consider: the saturated fats in coconut are different from those in animal fats. The saturated fats in coconut are medium chain saturated fatty acids (MCFAs) that offer health benefits, such as:
Providing a good source of energy (directly absorbed by the intestines and sent to the liver for rapid metabolism that produces energy)
Helping lower bad cholesterol levels
Protecting against heart diseases
Instructions
Froth the Coconut Milk: Pour 150ml of coconut milk into a cup and use a handheld electric frother to froth the milk.
Combine with Ice and Coffee: Add ice to the oat milk, then pour in coffee (I used a coffee capsule with an automatic coffee machine, but you can also mix your favourite instant coffee powder with water).
Serve: Stir well and enjoy a refreshing cup of iced latte!
