A deconstructed club sandwich containing pre-marinated black pepper chicken, lettuce, tomato slices, hard-boiled egg, and tuna mayonnaise spread, with a bowl of strawberry slices and lettuce salad drizzled with honey and topped with toasted coconut flakes at a side.
Club Sandwich noun A sandwich consisting typically of chicken and bacon, tomato, lettuce, and dressing, with two layers of filling between three slices of bread.

Is this considered a club sandwich? I mean, it contains chicken, tomato, and lettuce, minus the dressing, with the addition of hard-boiled egg and tuna spread. It has two layers of filling between three slices of bread. It sounds like it fits most of the description above, so I shall classify it as a club sandwich.

I decided to buy pre-marinated black pepper chicken this time, and I realised it has its own perks. Even though I don't know exactly what is used to marinate the chicken, and hence can't tell the exact nutritional content I have consumed, I don't have to buy additional ingredients for flavourful meat. Pros and cons.

I bought my pre-marinated black pepper chicken from Fairprice, but you can find similar ones online too - like how I found this SL Foods Marinated Chiken on Shopee. It even comes in 3 flavours: Cajun, Honey Glazed, and Spicy Smoked BBQ. This would allow you to make different variations of club sandwiches!

Let's talk about the side dish: Strawberry Honey Salad. It may sound like a strange combination, but as one of my go-to quotes says, "if you never try, you'll never know".

I think it was shortly after I tried a strawberry salad with balsamic vinegar dressing (similar to this Strawberry Balsamic Salad) in a cafe that I was inspired by the tangy and refreshing dressing. I wanted to recreate a similarly appetising dressing at home, but balsamic vinegar isn't commonly found in an Asian household. That was when I decided to take the leap of faith and try using honey instead, and I was pleasantly surprised by it.

One last thing to highlight in this healthy lunch/brunch idea is Ayam Brand tuna mayonnaise spread - my guilty pleasure. The guilt is due to the mayonnaise, but since it is packed with so much protein, it's not really that unhealthy, is it? One of my favourite childhood snacks is eating an entire can of tuna mayonnaise spread with a bag of crackers. Absolute heaven.
