Christmas is around the corner (I know it's a month away, but yes, it is around the corner) - and nothing is more suitable for the season than homemade baked goods. Gingerbread men, chocolate lava cakes, and assorted cookies. If you're out of Christmas gift ideas, it's always a thoughtful gesture to bake cookies like the sand cookies featured in this post, wrap them up nicely and gift them to someone!
YouTube recommended this amazing video of sand cookies by siZning, and they looked so beautiful that I couldn't resist trying them, even though I am not a good pastry chef. Disclaimer: I don't think I did the video creator justice; my cookies were chewy, not crumbly as shown in the video. Watch the video for more accurate instructions. I'm just sharing my cookie-making journey and roughly-estimated nutrition facts and cookie prices here.
I started by preheating the oven and making the cookie dough. The video featured three flavours: green tea, Earl Grey, and chocolate. I followed along, making green tea- and chocolate-flavoured cookies. Additionally, I decided to create coffee-flavoured sand cookies.
After letting the dough rest in the refrigerator for about an hour, I rolled out each dough between two baking paper sheets.
I rolled them out thinly (about 5mm, although the video suggested 2-3mm), hardened them in the refrigerator again, used a glass (about 6mm in diameter) as my cookie cutter.
The video creator used an air mat for a grid pattern on the cookies, which looked really pretty, but I didn't have an air mat so I had to skip it. After cutting the cookies into circles, I baked them in the oven. Check the video for oven temperature details.
After baking, it was time to add filling or frosting to the cookies. I wanted to gift them to a friend who might be allergic to chocolates, hence I couldn't use chocolate filling as shown in the video. Instead, I thought about using cream cheese, like in red velvet cakes.
Spoiler alert: Cream cheese wasn't the best choice, haha. It melts easily, and the cookies had to be refrigerated if not eaten right away. I'm not sure if this affected the lack of crispiness, or if the cookies were meant to be chewy. Regardless, it was still a fun experience, and I really enjoyed adding frosting!
Again, I was disappointed with the chewy texture of the cookies as I hoped for crispiness. Despite not being the best cookies, it was a fun baking experience and I would definitely try it again, maybe with an air mat next time to make pretty grid patterns on the cookies. :)
